The word "canapé" comes from the French for "sofa," describing how toppings elegantly "sit" on the bread base. Born in 18th century France, these sophisticated bites gained fame during Prohibition-era speakeasies, where they were designed to be enjoyed one-handed while socialising with a drink in the other.
Today, we continue this tradition of artful, bite-sized luxury – crafting each Do canapé with select Irish ingredients to transform your gatherings into memorable occasions.

At DO, we celebrate Ireland's indigenous food culture and sustainable food systems through every carefully crafted bite.
Our canapés showcase the exceptional bounty of our island—from Duncannon Smokehouse's delicately smoked trout to the freshest catch from Connolly's of Clogherhead. We source our meats from Pat McLoughlin, who partners with small family farmers raising animals on traditional Irish pastures, supporting rural communities while minimising environmental impact.
The rich flavours of Achill Island lamb honour our pastoral heritage, while Aran Bakery and Roth's provide the perfect foundations. Each creation is enhanced with local treasures—from Castle Howard honey, to Newgrange Gold oils, and Kenmare's finest smoked delicacies.
Our friendships with Ireland's passionate, artisan producers ensure every Do canapé tells a story of place, heritage, and conscientious deliciousness.

Packaging that's kind to the planet
Our boxes are made from fully biodegradable and recyclable materials, with no plastic content or coatings.
We're grateful to our patient packaging supplier Richard in Galway, a passionate advocate for sustainable solutions, who has created containers that are as thoughtful as the canapés they hold.
Once your Do experience is complete, everything can be disposed of in household recycling bins or at recycling centres.

Our Story
For over three decades, Claire Hanley has been delivering exceptional food and unforgettable service to events across Ireland. As hosting styles evolved, clients often asked for our signature canapés for dinner parties, communion celebrations, office events, and wedding receptions – and we happily obliged.
It soon became clear that there was a growing appetite for a new way to entertain.
Enter Tony Barry, Claire's son, an energetic Culinary Entrepreneurship graduate with a passion for parties and a vision for the future of entertaining: chef-crafted canapés delivered fresh to your door.
